And a homemade mayo, there is nothing better. Store-bought doesn’t even compare! To spice up this recipe, use my Curry Mayo. It will keep in the fridge for up to 10 days.

Turmeric Chicken Salad is an excellent food for meal prep. This recipe is NOT BORING and is good for your dang stomach.

On a Whole 30?

Make sure to use compliant mayo or homemade mayo. Instead of using pita bread, serve on lettuce cups, or make into a salad. For lettuce cups, Bibb lettuce would be great, but Romaine works just fine.

If you haven’t explored this yet on your Whole 30, it is a game-changer. I highly recommend having chicken salad prepped and lettuce on hand. So great for when you’re in a pinch!

For the freshest tasting chicken salad eat within 3-5 days.

Did you know chicken salad can be frozen! Yes, you heard that right folks. Freeze for up to a month.

Other Ingredients?

Chicken Salad is so versatile, but what really would have been delicious that I was not able to find in my rural part of the country…instead of dried cranberries, pomegranates. I’ve done it before, and it is fantastic.

Turmeric Chicken Salad

Ingredients
  

  • 2 cups chicken cooked and pulled (see note)
  • 2 stalks celery diced
  • 1/3 cup walnuts chopped
  • 1/3 cup dried cranberries
  • 1/2 cup Curry Mayo or Whole 30 complaint mayo (see note)
  • 1 tsp turmeric ground
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • In a large bowl, mix everything.
  • Serve on pita bread, lettuce cups, or on salad.

Notes

For the best tasting chicken salad, I highly recommend using my Instant Pot Whole Chicken recipe. Fork tender, juicy, and oh so easy!
The Curry Mayo is not only great with this chicken salad but on everything! It takes 5 minutes to make and keeps in the fridge for 10 days. But don’t worry, this recipe will come out tasty using regular mayo.
