Ingredients
  

  • 2 cups chicken cooked and pulled (see note)
  • 2 stalks celery diced
  • 1/3 cup walnuts chopped
  • 1/3 cup dried cranberries
  • 1/2 cup Curry Mayo or Whole 30 complaint mayo (see note)
  • 1 tsp turmeric ground
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. In a large bowl, mix everything.
  2. Serve on pita bread, lettuce cups, or on salad.

Notes

For the best tasting chicken salad, I highly recommend using my Instant Pot Whole Chicken recipe. Fork tender, juicy, and oh so easy!
The Curry Mayo is not only great with this chicken salad but on everything! It takes 5 minutes to make and keeps in the fridge for 10 days. But don't worry, this recipe will come out tasty using regular mayo.
