Fruit & Nut Bars (Homemade Larabars)

These Whole 30 Fruit & Nut Bars resemble some popular brands that are out there and taste just like them if not better. With more room for customizing and ALOT easier on your wallet, you can be sure you’ll be happy you took the time to make these.

Larabars arent that expensive considering your getting a whole food bar with no additives for about $1, but these cost pennies on the dollar. And while I like to think that during my Whole 30 round I will have plenty of time to make every single meal and snack, it’s not feasible. I need something that my boyfriend and I can snack on between meals or the mornings when running out the door. Life gets busy; there is no perfect Whole 30. These Fruit & Nut Bars only take 5 minutes to make.

Get the Perfect Fruit & Nut Bars

Equipment you will need is a high powered food processor. I just threw all my ingredients into it and then topped with pumpkin seeds. However, feel free to leave some nuts whole to give it more texture throughout. You want to make sure to soak the dates prior. I blend up very well with some liquid, whether this is lemon juice or water. Then add the nuts and seeds and pulse till you get to the texture you like. The thinner the consistency, the less likely it will hold. But don’t worry I have a recipe laid out that’s very easy to follow.

For my ’90’s & ’00’s kids you know what I’m talking about! Ha ok for real though you can make these however you want! The only thing that needs to stay the same is using a sticky naturally sweet binder, and something for it to hold on to and guess what you can add oils, coconut flakes, apple pie seasoning, flax seeds, GO WILD! Below is my amped up version but like I said you can make these Fruit & Nut Bars however you want! The secret ratio is 1 cup of nuts/seeds to 1 1/2 cup dried fruit. To make it easier, soak the dried fruit in hot water for at least 15 minutes. I like to use the water I used to soak my fruit in. Waste not, want not!

Ingredients
  

  • 1 c dates pittted and soaked in hot water for 15 minutes
  • 1/2 c raisins
  • 2 tbsp almond butter
  • 2/4 c cashews
  • 1/4 c almonds slivered
  • 1/4 c pecans
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • water to help process the dates
  • pumpkin seeds garnish

Instructions
 

  • After dates and rasins have soaked process with a little water till smooth.
  • Add in nuts and process till desired texture.
  • Form into bars in a pan lined with parchment and a little bit of oil, or into balls.
  • Refrigerate till bars or balls hardens about 4 hours.
  • Store in an airtight container.

Step by Step Photos

Gather all your ingredients. And start soaking dates and raisins.

Process dates and raisins till smooth, then add in nuts.

Pulse the nuts about 5 times or more.

I like mine more on the smooth side.

Press into a pan lined with parchment and oil. Top with pumpkin seeds and press them in. Refrigerate for 4 hours.

Serve! Great in the morning with coffee or as a snack during a slump in the day.
