Blistered Grapes & Blue Cheese Flatbread is an effortless gorgeous appetizer, dessert, or meal if you don’t feel like sharing. Great for dinner parties, date nights, holiday dinners, or a quick but fancy weeknight meal.
Why Blistered Grapes?
IYKYK. If not, let’s change that! Grapes are naturally sweet, and when sugar comes into contact with heat, it will caramelize, creating a profoundly delicious and nutty flavor. Caramelized grapes will burst in your mouth with sweet velvety goodness!
To blister the grapes quickly, use an air fryer. I’ve had mine since 2018 and have used it commercially and domestically with no issues! Highly recommend the one linked here!! However, you can easily use the oven for this recipe, just requires more time.
Not a blue cheese fan?
I get it; blue cheese is not for everyone. But this recipe has changed the blue cheese haters’ minds. The sweet pairings of the grapes and balsamic reduction help counteract blue cheese’s notorious (and IMO wonderfully) pungent flavor. If you fall under this category, I would suggest sticking with a block of mild blue cheese, do not reach for a Roquefort or Cabrales!!
What to serve with Blistered Grapes & Blue Cheese Flatbread?
Because it’s wonderfully pungent, tart, & sweet, this dish pairs well with a Champagne or other sparkling wine, Stilton Port, Malbec, or Cabernet.
I kept this recipe pretty simple with blistered grapes, blue cheese, fresh rosemary, and balsamic reduction. But, these additional toppings would be fabulous as well. Cooking is about having fun, experimenting, and doing what you like!

- pears
- cherries
- red onion
- arugula tossed in balsamic as garnish
- pizza dough instead of flatbread
To make it a meal, serve this flatbread with a side salad and my Maple Blue Cheese Dressing! The dressing follows this same flavor profile of sweet and pungent, and pairs wonderfully!

Blistered Grapes and Blue Cheese Flatbread
Ingredients
- 3 oz blue cheese
- 1 cup grapes red and green, removed from vine
- 1 tsp fresh rosemary chopped
- 1 flatbread
- extra virgin olive oil
- salt
- fresh black pepper
- balsamic reduction
Instructions
- To blister grapes, toss them in olive oil and a pinch of salt. If using an air fryer preheat to 350 and cook grapes for 7 mins on parchment paper. If using the oven, preheat to 350. Then place grapes on parchment lined baking sheet and cook for 10 mins or until blistered.
- Lay out flatbread on a baking sheet. Drizzle olive oil, fresh rosemary, black pepper and blue cheese crumbles on top. Once grapes have been cooked add them on top. Cook flatbread in the oven at 350 for 5-10 mins, until cheese is bubbly and crust is golden brown.
- Remove flatbread and drizzle with balsamic reduction. Slice, serve, and enjoy!
