Change up your boring chicken salad, and try Turmeric Chicken Salad. It is an antioxidant, anti-inflammatory, and gut healing boost. Creamy, crunchy, and full of flavor to wake up your body and soul!
What Makes This Recipe So Good?
The main ingredient pulled chicken. Check out my hands-off method for the best chicken of your life, Instant Pot Whole Chicken. It is the fork-tender, juicy, and easy to make.
And a homemade mayo, there is nothing better. Store-bought doesn’t even compare! To spice up this recipe, use my Curry Mayo. It will keep in the fridge for up to 10 days.
Gut Healing:
Turmeric Chicken Salad is an excellent food for meal prep. This recipe is NOT BORING and is good for your dang stomach.
- Turmeric is a known anti-inflammatory
- Chicken is a low-fat source of protein
- Walnuts help with digestive health by increasing the amount of good probiotic-type bacteria
- Celery is an antioxidant and anti-inflammatory, offering protection to the entire gastrointestinal tract and improving the lining of the stomach
On a Whole 30?
Make sure to use compliant mayo or homemade mayo. Instead of using pita bread, serve on lettuce cups, or make into a salad. For lettuce cups, Bibb lettuce would be great, but Romaine works just fine.
If you haven’t explored this yet on your Whole 30, it is a game-changer. I highly recommend having chicken salad prepped and lettuce on hand. So great for when you’re in a pinch!
Storage?
For the freshest tasting chicken salad eat within 3-5 days.
Did you know chicken salad can be frozen! Yes, you heard that right folks. Freeze for up to a month.
Other Ingredients?
Chicken Salad is so versatile, but what really would have been delicious that I was not able to find in my rural part of the country…instead of dried cranberries, pomegranates. I’ve done it before, and it is fantastic.
