Easy Chicken Pot Pie with a biscuit topping makes this homey and comforting meal do able on a cold weeknight. Warm, buttery, and filling. It is a fabulous one-pot meal, thanks to my cast iron skillet.

This recipe uses my Homemade Chicken Broth, which sets this dish apart. It is fairly simple if using an Instant Pot. I like to keep some on hand, one large mason in the fridge and one in the freezer. Be sure to check out my tips in the post to freeze safely! Following, is probably my greenest tip on here that you may not know of yet. I save all my scraps from prepping and chicken bones from whole chickens. I store then in a ziplock and put in the freezer until I’m ready. Beautiful stocks are so simple just grab a bag, dump in the IP, add other aromatics if want, some water, set, and forget baby! I love it.

One Pot Meal
You will also need a 12 inch cast iron skillet or a large oven-safe pan. If you don’t have either, you could cook everything in a pan then transfer to a large casserole dish. I love my cast iron. It is the workhorse in my kitchen. I have two one 10 inches one 12 inches, and Id says I use the 12 inches more. Been interested in buying one, Lodge makes an exceptional cast iron that’s affordable!
Dairy Free Or Vegan Chicken Pot Pie?
You may not know this, but Bisquick is dairy-free and vegan! You can easily swap out ingredients like milk=nut/soy milk, egg=flax egg, chicken=mushrooms. And this dish would still turn out amazing!
Meal Prep & Freezer Friendly
This meal is fantastic because you can make it and freeze for later. Can freeze the whole pie or in portions for a quick dinner for one. Great for meal prepping dinners for a large family on Sunday, for a potluck, or any weeknight dinner.

Easy Chicken Pot Pie
Equipment
- Cast Iron Skillet 12"
Ingredients
- 2 lbs chicken breast diced
- 2 cups Homemade Chicken Bone Broth see note
- 1-2 medium red potatoes diced
- 1/3 cup yellow onion diced
- 1/3 cup carrots sliced
- 1/3 cup celery sliced
- 1-2 cloves garlic minced
- 1 tbsp lemon pepper seasoning no salt
- 1 tsp sage ground
- 1/2 tsp rosemary dried
- 1 tbsp Italian seasoning
- 1/3 cup flour
- 5 tbsp butter or ghee
- 1 cup Bisquick
- 1 egg
- 1/2 cup milk of choice
Instructions
- Preheat oven to 350. In a large oven-safe saute pan or a 12 inch cast iron skillet, cook chicken with a couple of pinches of salt, on med-high for about 5 minutes. Remove chicken from pan.
- Turn heat down to medium, melt 5 tbsp of butter or ghee. Add carrots, celery, potatoes, and onion to the pan with a couple of pinches of salt. Once veggies start to sweat, add garlic and seasonings. Cook until seasonings are fragrant. Stirring continually add 1/3 cup of flour or binding agent. Then whisk in chicken broth slowly until flour is combined, bring to a boil. Once thickened, take off the heat and mix in chicken.
- In a bowl, combine Bisquick, egg, and milk. Pour over chicken pot pie mix. Pop in the oven for 22 minutes or until golden brown. Rest for 10 minutes and serve.
