- Add feta, olive oil, and Greek yogurt to blender.
- Blend till smooth.
- Transfer to a bowl and stir in seasonings, optional.
- Refrigerate for an hour or overnight. When serving top with a glug of good olive oil and a squeeze of lemon. Serve with flatbread, crusty bread, veggies, fruits, or grilled meats.
Notes
Across the board, I prefer buying chunked feta vs. pre crumbled because of its creamier and better texture.
If the dip is thick, add feta brine or more lemon juice. Remember, it will thicken in the fridge.
If it's too chunky, you can run through a fine-mesh sieve before adding seasoning.
