Pumpkin Chilli

A hearty and oh so healthy chilli recipe

Ingredients
  

  • 15 oz can pumpkin puree not pumpkin pie filling!
  • 2, 15 oz cans black beans
  • 2, 15 oz cans fire roasted diced tomatos
  • 2, 15 oz cans kindey beans
  • 1 large onion diced
  • 2 tbsp go to seasoning
  • 1 tbsp chipotle seasoning
  • 1 tsp chili powder
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 3-4 cups vegetable broth
  • 1 tbsp maple syrup

Method
 

  1. Heat oil in a large stockpot.
  2. Cook onions till soft
  3. Add seasonings and a couple pinches of salt
  4. Add the rest of the ingredients
  5. Bring to a boil and simmer for 30 minutes
  6. Check salt level and season as desired. Serve with toppings of choice
