Funky Monkey Muffins (Whole 30 & Gluten Free)

Have old bananas laying around or in the freezer? Well, I have an easy peasy recipe for you! These Funky Monkey Muffins are soft and spongy, while also packed with nutrition. They are Whole 30 friendly, Gluten free, and with no added sugars! Delicious muffins packed with almond butter, walnuts, and chocolate chips.

Whole 30 Muffins?

Some would say that eating muffins on a Whole 30 is SWYPO, but everyone does a Whole 30 differently. And to some, that means just merely eating what ingredients are allowed. If muffins are a trigger food for you, then maybe skip for now and make during your Food Freedom.

Re-purpose old bananas

In our house, we are a huge fan of no waste. To get the best flavor and texture, you want very ripened almost black bananas! Seriously! I’m sure you’ve seen your mom or grandma use them to make banana bread. The riper they are the sweeter they are.

It’s not 1950 anymore

As bananas ripen, the starch in their flesh turns into sugar. Because of that, this recipe has NO ADDED SUGAR and is still delicately sweet and just damn delicious.

Swapping flour for almond flour is no-brainier. Besides the gluten-free benefit, almond flour is incredibly nutritious. It provides many health benefits, including a reduced risk of heart disease, and helps to improve blood sugar control.

Change it up

These Funky Monkey Muffins are super customizable. If you don’t have all the ingredients, no worries. The sky’s the limit. Some goodies to try:

  • Cranberries
  • Blueberries
  • Nuts of any kind
  • Coconut flakes
  • Cinnamon Chips

Why make these again & again?

Besides the fact that they are delicious, these muffins are perfect for meal prep as they are easy to make, and they store very well. Store in a container for a week or freeze for over a month. Almond flour doesn’t dry out in the freezer like wheat flour. WIN!

Funky Monkey Muffins (Whole 30 & Gluten Free)

Ingredients
  

  • 4 overripe bananas peeled
  • 1 large egg whisked
  • 1/2 tsp vanilla extract
  • 1/3 cup seed or nut butter
  • 1 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tbsp cocoa powder optional
  • 1/2 cup walnuts crushed, optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare muffin tins with muffin wrappers or grease with cooking spray.
  • In large bowl mix egg, vanilla, and seed or nut butter well. Next, mix in banana, making sure its mashed up some. Lumps are expected and totally fine.
  • In a separate smaller bowl mix almond flour, baking soda, and salt.
  • Sprinkle and fold dry ingredients into wet ingredients.
  • Next, add walnuts or any other fun flavoring add ins!
  • Pour 1/4 cup into each muffin cup.
  • Bake for 15-20 minutes, enjoy!
